Squash Pizza

Okay, I know you're thinking "what in the world?" I was thinking the same thing when Ben told me about this little concoction he had in mind...but I have to tell you...it was one of the tastiest things I have ever eaten, so I just had to post about it.



You saw in the last post that the squash in our garden is coming in really good now...and I bought an extra pizza crust when I made that patriotic fruit pizza...so he decided to get creative for dinner tonight, and I'm so glad he did!



He just used regular old pasta sauce from a jar, then used 3 different kinds of cheese: mozzarella, Parmesan, and feta. He sauteed the squash in a little bit of EVOO(as Rachel would say) and pepper and grated parmesan. Then he put it all together and baked at 450 for 10 minutes....it was DELISH! FOR REAL!

That looks really good!! I might even be able to sneak it in my kids :-) Good job Ben! I told Mr. Tom to look at your blog to see your garden. He said he always thought Ben would make a good gardener :-) I did tell him it was your idea though, Tabby!!

That looks awesome. I love squash. I would never have thought to put it on a pizza though.
